Organic garden, native trees, and commitment to the Santa Catalina community

A project that cultivates change and awareness

This year, Estancia El Colibrí Relais & Châteaux enthusiastically joins Relais & Châteaux and Slow Food’s Food for Change 2025 campaign under the motto “Plant Your Tree”.
The initiative invites guests to actively participate in an action with real impact: planting native and fruit trees that regenerate the soil, protect biodiversity, and strengthen the bond between nature and the community.

Each of our visitors can plant their own tree in our parks, contributing with a symbolic gesture and a voluntary donation.
The funds and harvested fruits are directed to Santa Catalina School, with which we collaborate throughout the year through educational and recreational activities. The funds will, for example, be used to cover English classes or other needs that we define each year with the school principal.

The organic garden and the holistic farm

Respect for nature is part of Maison Fenestraz’s DNA and guides every decision at Estancia El Colibrí.
On our property, the organic garden supplies the kitchen with fresh, seasonal, and chemical-free produce, ensuring authentic, healthy, and zero-mile gastronomy.
Each dish at the restaurant expresses the connection between farm and table, with ingredients grown just a few meters from where our guests sit to enjoy them.

Additionally, we have developed a holistic farm, EOV-certified for its regenerative livestock model, a practice that improves soil health, promotes animal welfare, and restores natural ecosystems. In this way, we combine luxury and sustainability in perfect harmony with Córdoba’s rural life.

Planting for the future

The “Plant Your Tree” campaign goes beyond the simple act of planting: it is an invitation to reconnect with the earth.
At Estancia El Colibrí, guests actively participate in this experience, understanding that each seed planted represents a greener and more balanced future.

We constantly work to reduce our environmental footprint, prioritizing local materials, optimizing water use, and minimizing waste.
Every detail reflects the vision of responsible luxury, deeply rooted in respect for the land and the communities that inhabit it.

Thanks to our ongoing collaboration with Santa Catalina School, the Food for Change project also becomes an educational tool.
Children learn about the environment, agriculture, and sustainability, while guests witness how hospitality can transform realities.
